Seafood Chowder, New England Style
- 2 1/2 cups of bottled clam juice
- 20 oz. of baby clams
- 1-pound of cooked shrimp
- 1 pound of bay scallops
- 2 cans chicken broth
- 4-5 medium red potatoes
- 1 cup carrots (cut up)
- 1 cup of celery (cut-up)
- 1 small onion (cut-up)
- 1 cup red bell pepper (cut-up)
- 1 tsp of butter
- 3/4 cup of flour
- 16 oz half/half cream
- 1 cup of crab claw meat (or crab meat of your choice),can also use a few whole crab claws
- Use 6-8 quart Dutch oven
- Melt butter on low fire
- Add onions,stir until they soften (about 3 minutes)
- Add carrots, potatoes, celery and red pepper
- Add clam juice
- Add chicken broth
- Bring to boil for approx 2-3 minutes, then simmer until the potatoes soften
- Add shrimp and scallops, clams and crab
- Mix flour to (cold) half & half and slowly add mixture until soup thickens
