Chicken Divan On Rice(Serves 6)
- 16 oz. pkg. frozen broccoli spears
- 1/4 c. butter or margarine
- 6 Tbsp. flour
- 1/2 tsp. salt
- dash of pepper
- 2 c. chicken broth
- 1 c. whipping cream or condensed light milk
- 3 chicken breasts, halved and cooked
- 1/4 c. grated Parmesan cheese
- 3 c. uncooked rice
- 1 Tbsp. butter
- Cook rice until tender in 6 cups water and 1 tablespoon butter.
- Cook broccoli per package directions.
- Drain.
- Melt butter in skillet.
- Blend in flour, salt and pepper.
- Add chicken broth.
- Cook until mixture thickens and bubbles.
- Stir in cream. Place rice in bottom of 9 x 13-inch pan.
- Place broccoli on top of rice.
- Pour 1/2 of sauce over.
- Top with chicken.
- Add Parmesan cheese to remainder of sauce and pour over chicken.
- Sprinkle with additional Parmesan cheese if desired.
- Bake at 350u0b0 for 20 to 30 minutes.
