Chocolate Pudding Cake

  1. Preheat oven to 350F.
  2. Combine flour, sugar, 1/4 cup cocoa, baking powder & salt in an 8 inch square baking pan, stirring with a fork to combine.
  3. Pour in milk & oil and stir again until batter is uniform.
  4. Sprinkle brown sugar & the remaining 1/4 cup cocoa evenly over batter.
  5. Stir vanilla & espresso powder into the hot water, then pour the mixture over the batter. DO NOT MIX.
  6. Place pan in oven & bake 30-35 minutes, until surface of cake looks dry. The pudding will be bubbling around the edges of the pan.
  7. Allow to cool for 5 minutes before serving.
