Old School House Burritos

  1. Combine the first 6 ingredients to make the Red Sauce. Simmer over medium-low heat for 20-30 minuter
  2. Brown the meat with the onion, drain and season with the Adobo. Add the Black beans and 1 cup of the Red Sauce. Simmer for 5-10 minutes.
  3. Oil a 9x13" baking dish. Spread 1 cup of the Red Sauce in the bottom of the dish. Warm the tortillas, divide the lettuce, tomatoes, shallots, cheese and meat mixture between 5 tortillas. Roll up as burritos and place in prepared baking dish. Cover with the remaining Red Sauce, 1 cup of shredded cheese and green onions.
  4. Bake at 350 degrees for 20 minutes.
  5. Serve with Sour Cream and Guacamole.
