Baked Goat Cheese In Tomato Sauce
- 8 ounces of Goat Cheese
- 4 ounces Whipped Cream Cheese
- 4 ounces Skim Milk Ricotta
- 1/3 cup loosely packed chopped basil
- 2 cups marina sauce
- 1/2 cup Olive Oil
- 4 cloves Garlic
- One medium zucchini
- Loaf Bread of choice
- Mix cheeses together. It's easier to mix if at room temperature. Fold in fresh basil. In shallow baking dish, form a "mound" of the cheese mixture in the center. Then, carefully poor the marinara around the cheese, but do not fully cover. Put in 350 degree over for 25-30 minutes. Until the sauce is bubbly and the cheese is hot.
- Meanwhile, mince garlic and mix with olive oil. Slice bread and zucchini. Top the bread and zuccini with the oil and garlic mixture. Place in oven with 10 minutes left of cooking time.
- Serve family style, with bread and zucchini for dipping into the baked cheese and marinara
