Halibut For The Hell-Of-It

  1. Pre-Heat oven to 400 degrees.
  2. Wash Halibut and cut into 4 pieces. Don't worry about removing skin.
  3. In large oven-safe sauce pan, heat oil and saute garlic and onion until onion is translucent. Add wine and lemon juice, and simmer 3-5 min until slightly reduced. Add fish, skin side down, and fresh herbs. Spoon wine reduction over top of fish, and return to low boil.
  4. Next, cover and place pan into oven for 5 min. Remove cover, spoon mixture over the fish again, and bake uncovered until fish is flakey and wine sauce is basically fully reduced, about 5-7 min. Remove and let stand about 2 min before serving.
