Halibut For The Hell-Of-It
- 1 lb Halibut, cut into four pieces
- ~3/4 cup Dry White Wine
- 2 tbls of Olive Oil
- 1/4 cup yellow onion, finely chopped
- 1 clove garlic, finely chopped
- 2 tbls lemon juice
- 2 Tbls fresh curly parsley, torn finely
- 2 Tbls fresh sage,
- 4 tbls fresh rosemary, broken from stalk
- 4 tbls fresh chives, ripped up
- Fresh ground black pepper
- Pre-Heat oven to 400 degrees.
- Wash Halibut and cut into 4 pieces. Don't worry about removing skin.
- In large oven-safe sauce pan, heat oil and saute garlic and onion until onion is translucent. Add wine and lemon juice, and simmer 3-5 min until slightly reduced. Add fish, skin side down, and fresh herbs. Spoon wine reduction over top of fish, and return to low boil.
- Next, cover and place pan into oven for 5 min. Remove cover, spoon mixture over the fish again, and bake uncovered until fish is flakey and wine sauce is basically fully reduced, about 5-7 min. Remove and let stand about 2 min before serving.
