Morning Glory Protein Muffins
- 1 cup Old fashioned oats (or 3/4 cup oat flour)
- 3/4 cup Oat bran (or an additional 1 cup old fashioned oats)
- 1/4 cup Protein powder (vanilla or flavor of choice. Or an additional 1/4 cup oats)
- 1/2 cup Baking stevia or 1 cup sweetener of choice 1
- 1 tsp Baking soda
- 1 1/2 tsp Baking powder
- 1 1/2 tsp Ground cinnamon
- 1/2 tsp Salt
- 4 Egg whites
- 1/2 cup Unsweetened applesauce
- 1 (8 oz) Can crushed pineapple, (not drained)
- 1 cup Grated or shredded carrots
- 1/4 cup Shredded coconut (or additional 1/4 cup shredded carrots)
- Optional: 1/4 cup chopped walnuts OR 1/4 cup raisins
- 3 WWP+*
- 1 Or 10-12 pkts stevia or to taste.

- Blend everything together in a blender or food processor until oats are smooth,(except for coconut and optional ingredients if using). (Place wet ingredients in the blender first for easy blending!)

- Stir in coconut (or extra carrots) and raisins if desired. Sprinkle walnuts on top (or stir into batter) just before baking if using as well!

- Bake muffins at 350 degrees for 30-35 minutes, or until toothpick comes out clean.
