Ilene’S Cheese Manicotti
- 3/4 cup Ricotta
- 3/4 pound Mozzarella Cheese, shredded
- 2 tablespoons Butter
- 2 tablespoons Parmesan Cheese, grated
- 8 ounces Manicotti Noodles
- 1 jar Your Favorite Pasta Sauce
- 1/3 cup Parmesan Cheese, grated
- 1 pinch Salt & Pepper, to taste
- 3 pieces Eggs, lightly beaten
- Preheat over to 400 degrees F.
- Cook noodles in a large pot of boiling salted water, stirring occasionally, until al denote. Drain and transfer to a lightly oiled rimmed baking sheet.
- Drain ricotta, if necessary, and combine in a medium bowl with mozzarella, eggs, melted butter, and parmesan cheese. Mix well. Season to taste with salt and pepper.
- Use a piping bag to stuff the cheese mixture into each manicotti noodle.
- Cover the bottom of a 13"x9" baking dish with the pasta sauce (and any leftover cheese filling). Arrange the stuffed manicotti in the baking dish. Top with the remaining sauce and then the 1/3 cup of Parmesan cheese. Bake manicotti until bubbling and lightly browned on top 30-40 minutes. Let cool 5 minutes before serving.
