Spiced Fruit Chutney
- 2 Cups Cider Vinegar
- 1 Med. Onion, finely chopped
- 1/2 Cup Water
- 1 Tbl. Ground Ginger
- 2 tsp. Grated Orange Peel
- 1 1/2 tsp. Salt
- 1/2 tsp. Cinnamon
- 1 Garlic Clove, minced
- 1/4 tsp. Dried Red Pepper Flakes
- 3 Cups Brown Sugar, packed
- 2 small Bartlett Pears, diced
- 1 Lg. Granny Smith Apple, diced
- 2 Cups Cranberries
- 1/2 Cup Dried Currents
- Combine first 9 ingredients over Med-High heat. Bring to boil, stirring frequently. Reduce to low and simmer 15 minutes, stirring occasionally.
- Add Sugar, Pears, Apples, Cranberries and Currents. Stir until sugar dessolves. Cook until fruits are soft and liquid thicken slightly, stirring occasionally, about 1 hour.
