Caesar Salad
- 2 garlic cloves minced
- 1/2 cup olive oil
- 2 heads romaine lettuce
- 1 cup french bread cubed
- 1 1/2 teaspoons salt
- 1/4 teaspoon dry mustard
- 5 anchovies mashed
- 3 tablespoons wine vinegar
- 1 egg
- juice of 1 lemon
- 3 tablespoons grated cheese
- Saute 2minced garlic cloves in 1/2 cup of olive oil. Set aside but 2 tablespoons of this mixture.
- Fry 1 cup cubed french bread in the 2 tablespoons oil.
- Wash dry and break up 2 heads of romaine lettuce into a large bowl.
- Sprinkle over the romaine:
- 1 1/2 teaspoons salt/1/4 teaspoon dry mustard
- pinch of pepper
- 5 anchovies mashed
- 3 tablespoons wine vinegar and the remaining oil.
- Place 1 egg and the juice of 1 lemon in the bowl and mix well.
- Add cubed bread and 3 tablespoons of grated cheese, toos and serve
