Grilled Stuffed Chicken Breast
- 4 boneless, skinless chicken breasts, trimmed
- 4 slices Canadian bacon or ham
- 1/2 cup favorite tomato or marinara sauce
- 1/2 cup Parmesan/Romano cheese, grated
- optional:
- 4 hamburger buns
- 4 cloves of garlic, minced
- 4 T. butter, melted
- extra tomato sauce and cheese to garnish
- Turn the grill on. Butterfly the chicken breasts. Cut the Canadian bacon slices in half to make semi-circles. Layer 2 T. tomato sauce, two pieces of Canadian bacon, and 2 T. of cheese in chicken breast and fold closed. Grill on medium-high heat for approximately 20-25 minutes, until done. Excellent alone, or as a sandwich. For sandwiches, mix minced garlic and melted butter and brush on insides of hamburger buns. Lightly toast on grill, fill with chicken, and enjoy.
