Key Lime Pie
- 2 c. sugar
- 1/4 c. plus 2 Tbsp. cornstarch
- 1/4 tsp. salt
- 1/2 c. fresh lime juice
- 1/2 c. cold water
- 3 eggs, separated
- 2 Tbsp. butter or margarine
- 1 1/2 c. boiling water
- 1 tsp. grated fresh lime peel
- green food coloring (if desired)
- 1/4 tsp. cream of tartar
- 1 (9-inch) baked pastry shell
- Combine 1
- 1/2tups sugar,
- cornstarch
- and salt in a 2 quart saucepan.tdd
- lime
- juice, water and egg yolks;tlend well. Add
- butter
- and
- gradually
- add
- boiling
- water.
- Bring mixture to a boil over medium heat and cook 3 minutes, stirring constantly.
- Stir in lime peel and green food coloring.
- Remove from heat and cool 20 minutes.
- Put in shell.
