Not Borscht! Italian Something In The Crock Pot
- 1 Hambone with some ham on it
- 4 quarts Water
- 2 cups Dried white beans
- 3 Beets, sliced
- 2 Parsnips, sliced
- 4 Carrots, sliced
- 3 Purple Potatoes, sliced
- 2 Yellow squash, sliced
- 2 Zucchini, sliced
- 2 Sweet potatoes, sliced
- 2 tablespoons Garlic, minced
- 2 teaspoons Oregano
- 2 teaspoons Dill
- 2 teaspoons Salt
- 1 teaspoon Pepper
- 1 cup Sour Cream
- 1. Place hambone in crock pot with water. Cook overnight on low until ham falls off bone.
- 2. Remove bone and cool. Add dried beans. Cook 8-12 hours on low.
- 3. Add all the vegetables and cook on high 2 hours, until vegetables very soft.
- 4. Grab your potato masher and mash all the vegetables and beans you can find.
- 5. Add garlic, oregano, dill, salt, and pepper. Stir. Let heat another 20 minutes.
- 6. Serve with a dollop of sour cream. Call it "Italian something because it has oregano."
