Fiesta Stack-Ups
- 4 lb. ground beef
- 3 large onions, chopped
- 2 (14 1/2 oz.) cans whole peeled tomatoes
- 2 (15 oz.) cans tomato sauce
- 2 (12 oz.) cans tomato puree
- 4 Tbsp. chili powder
- 2 tsp. cumin
- 1 tsp. garlic powder
- 6 tsp. salt
- 2 (23 oz.) cans Ranch Style beans
- 2 (12 oz.) pkg. crushed corn chips
- 1 (14 oz.) box rice, cooked
- Meat Sauce
- 1 lb. Longhorn Cheddar cheese, grated
- 2 large onions, chopped
- 1 large head lettuce, chopped
- 5 to 6 tomatoes, chopped
- 1 (4 1/2 oz.) can ripe olives, chopped
- 1 c. pecans, chopped
- 1 (7 oz.) pkg. coconut
- 1 (16 oz.) jar picante
- Brown meat and onions; drain excess fat.
- Add remaining ingredients, except beans, and simmer for 1 to 1 1/2 hours.
- Add beans and heat thoroughly.
