Stir Fry Sauce

  1. Put vinegar, soy, sherry, and ginger in a large pot. Rinse and quarter apples, add to pot. Rinse, halve, and pit plums, add to pot. Rough chop onion and peppers, add to pot. Toss garlic in whole. Bring pot to a boil over medium high heat, stirring occasionally. Lower heat and cook until fruit is tender. Run through food mill.
  2. Return puree to pot, or put in a crock pot, add sugar and spices, stir thoroughly. Cook until mixture begins to coat a spoon. Mix arrowroot and white wine vinegar, add to pot. Cook until mixture thickly coats a spoon. Stir in xanthan gum, process as desired.
