Cheddar Chili Pie
- 1 Lb lean ground beef
- 1 large onion chopped
- 2 gloves of garlic chopped fine
- 28 oz whole tomatoes
- 15 oz kidney beans with juice
- 1 1/4 cp cornmeal
- 1 cp grated cheddar cheese
- 2 T chili powder
- 1 tsp cumin
- 1/4 tsp cayenne pepper
- 1/2 tsp crushed red pepper
- 1/2 tsp ground black pepper
- Dash of Tabasco sauce
- 1 1/4 cp of skim milk
- 2 eggs, lightly beaten
- salt & pepper to taste
- Saute beef, onion & garlic til meat is brown.
- Drain off the fat.
- Add the tomatoes, beans, 3/4 cp cornmeal, 1/2 cp cheese, & seasonings.
- Cook over low heat, stirring occasionally, for about 15 minutes.
- Pour into casserole dish.
- In the same pan combine the milk, the rest of the cornmeal,and the salt and pepper to taste.
- Stir over low heat until it thickens a little.
- Then add the remaining cheese and the eggs, stirring until smooth.
- Pour this over the ground beef mixture. Bake uncovered at 375 deg. for 30 minutes or until the crust is lightly browned.
