Eye-Talian Chicken
- 2 or 3 handfuls of angel hair pasta
- 4 chicken breasts
- 3/4 c. grated Mozzarella cheese
- 1 medium size jar tomato sauce
- 1/2 c. heavy cream
- 1 1/2 c. fresh spinach
- 1 diced tomato
- 1 chopped garlic clove
- Italian bread crumbs
- 2 or 3 Tbsp. olive oil
- Bread chicken breasts, fry thoroughly; set aside.
- Start the tomato sauce (low or medium heat).
- Start the angel hair pasta (boil the water).
- Saute the olive oil, chopped garlic, tomato and spinach; set aside.
- When tomato sauce is heated, turn heat to low; slowly stir in heavy cream.
- Broil chicken breasts with Mozzarella cheese on top until cheese melts.
- Drain oil off of sauteed vegetables.
- Drain pasta.
- On plate:
- Put angel hair pasta 1st, sauteed vegetables 2nd, chicken breasts with Mozzarella 3rd and cover with the pink sauce.
