Baked Chicken With Plums, Ginger And Soy
- 8 chicken breasts
- 4 TBS olive oil
- 1 onion, chopped
- 25g/1 oz butter
- 2 TBS lemon juice
- 1 TBS soy sauce
- 1 tsp ground ginger
- 1 TBS tomato puree
- 2 TBS brown sugar
- 1 tsp salt
- 350g/12oz plum jam
- 1 tsp dry mustard powder
- dash of worchestershire sauce
- 1 garlic clove, crushed
- 6 fresh plums (stoned and quartered)
- Season chicken in salt and pepper
- Brown slightly in olive oil, remove from heat.
- Saute onion until soft. Add all remaining ingredients except fresh plums, simmer for 15 minutes.
- Place chicken in oven-proof dish, cover with sauce, scatter with plums. Bake in oven for 45 minutes on 350 degrees F.
