4 Flavored Pound Cake
- 2 2/3 c. less 1 Tbsp. flour
- 3 tsp. baking powder
- 1/8 tsp. salt
- 1 c. plus 2 Tbsp. sugar
- 1/2 c. canola oil
- 1/4 c. unsweetened applesauce
- 3/4 c. skim milk
- 1 1/2 tsp. vanilla extract
- 3/4 tsp. almond extract
- 3/4 tsp. lemon extract
- 1/2 tsp. rum extract
- 6 egg whites (large), beaten stiffly
- Spray Bundt pan; dust with flour and set aside.
- Combine flour, baking powder, salt, sugar, oil, applesauce and milk; beat with mixer until batter is smooth.
- Add extracts; fold in 1/3 of beaten egg whites.
- Gently fold in remaining beaten egg whites. Pour batter into prepared pan.
- Bake in 325u0b0 (preheated) oven 45 to 60 minutes.
- Cool 10 to 15 minutes.
- Remove from pan.
- Slice and serve with strawberries and whipped cream if desired.
- Makes 10 to 12 servings.
