Aunt Livia'S Sausage Frittata

  1. Preheat oven to 375 degrees.
  2. 2 - saute meat with onion in a non stick skillet until done, about 10 mins
  3. 3 - remove from pan.
  4. 4 - in same pan with added oil, if needed, cook hash browns until golden brown, about 10-12 mins.
  5. 5 - lightly season potatoes with salt (optional)- hash browns are already salted from package
  6. 6 - add half of sausage mixture to potatoes.
  7. 7 - with back of spoon, press potatoe mixture evenly onto bottom of skillet.
  8. 8 - Add the eggs to the remainder of the sausage meat; add salt & mix with fork.
  9. (beat eggs first before adding to the remainder of the sausage meat).
  10. 9 - pour egg with the sausage meat over potatoes & cook for 3 minutes until egg mixture begins to set around edges.
  11. 10 - place skillet in oven & bake for 10 to 15 minutes or until eggs are done.
  12. 11 - thinly slice a couple of tomatoes (optional) & arrange on top.
  13. 12 - sprinkle with Parmesan cheese.
