Steak Quesadilla
- marinate 1/2 lb. flank/skirt steak for 30 mins in:
- 1/3 cup fresh lime juice
- 1/4 cup olive oil
- 1 tablespoon minced garlic
- 1/4 teaspoon cayenne pepper
- 1tsp salt
- for blue cheese aioli:
- 1 cup mayonnaise
- 1 Tablespoon minced garlic
- 1 teaspoon lemon juice
- 1/2 teas salt
- 1/8 teaspoon cayenne pepper
- add to aioli and process till smooth:
- 1/3 cup crumbled blue cheese
- assemble with:
- 2 cups monteray jack cheese, shredded
- 1 red pepper grilled, peeled cut in strips
- 1 yellow pepper same as above
- 4 8 inch flour tortillas saute in slightly oiled pan
- marinate steak with
- lime juice, 1/4 olive oil, 1 tablespoon minced garlic, 1/4 tsp cayenne pepper in plastic bag for 30 mins
- blend aioli stuff in food processor then add blue cheese-blend till smooth
- preheat grill when hot grill peppers until charred (10 mins) steam in plastic bag until cool
- grill steak 5-10 mins on each side-slice at angle
- heat oil in sautAAAA pan
- add tortilla to pan and sprinkle with 1/2 cup cheese.
- lay steak and peppers on one half-turn over the flap when cheese melts.
- Serve with aioli
marinate, lime juice, olive oil, garlic, cayenne pepper, salt, mayonnaise, garlic, lemon juice, salt, cayenne pepper, till smooth, blue cheese, assemble, jack cheese, red pepper, yellow pepper, flour tortillas
