Sweet-Sour Bean Salad
- 1 (No. 2) can kidney beans, drained
- 1 (No. 303) can each of wax beans and green beans, drained
- 1 pkg. frozen baby lima beans, cooked and drained
- 1 c. chopped celery
- 1 onion, chopped
- 1/2 c. chopped green pepper
- 2 chopped pimentos
- 1 1/2 c. sugar
- 1 c. vinegar
- 1/2 c. salad oil
- salt and seasoned salt to taste
- Cook the frozen lima beans until fork-tender.
- Combine drained beans with chopped celery, onion, green pepper and pimentos. Combine sugar, vinegar and oil in a saucepan; bring to boil.
- Add salt and seasoned salt; set aside to cool.
- Pour dressing over salad.
- Refrigerate and stir occasionally.
- Prepare this salad the day before using.
- Serve with slotted spoon.
