English Muffin Loaf(One-Rise Microwave Recipe)

  1. In large bowl, combine 1 1/2 cups flour, undissolved yeast, chives, sugar, salt and baking soda.
  2. Heat water and sour cream until very warm (120u0b0 to 130u0b0).
  3. Add to dry ingredients; beat well. Stir in remaining flour to make soft dough.
  4. Grease 8 1/2 x 4 1/2-inch microwave safe loaf pan; sprinkle with cornmeal.
  5. Turn dough into prepared pan; top with additional cornmeal.
  6. To rise; microcook uncovered on Medium (50% power) for 1 minute.
  7. Let rest 10 minutes.
  8. Repeat cooking and resting 1 to 2 times until dough doubles in size.
  9. To bake, microcook on High (100% power) for 4 to 6 minutes or until top is no longer moist.
  10. (Crust will be pale.) Let rest 5 minutes in pan.
  11. Remove from pan.
  12. Cool on wire rack. Slice and toast to serve.
  13. Tested in a 600 to 700 watt microwave oven.
