Peach Pecan Crumble Pie
- 1 9" uncooked pie crust
- filling:
- 42 oz. Peach Slices (canned or fresh)
- 1/4 cup cornstarch
- 1/2 sugar
- 1/4 tsp. almond extract
- topping:
- 3/4 pecans coarsly chopped
- 1/3 cup old fashioned oats
- 2 tbl sugar
- 2 tbl light brown sugar
- 1/4 unsalted butter
- 1 1/2 tsp ground cinnamon
- 3/4 tsp nutmeg
- 1/4 tsp salt
- Prepare Filling: add sugar, cornstarch and almond extract to peach slices. Toss to coat.
- Turn filling into pie shell. In a food processor, combine all topping ingredients: pecans, oats, sugar, brown sugar, butter, cinnamon, nutmeg, and salt. Pulse until it forms coarse crumbs. Pour topping evenly on top of filling. Loosely surround edges of pie crust with tin foil to keep the crust from browning too fast. Bake at 400 degrees for 20 min, and then at 350 degrees for a remaining 30 minutes or until topping and pie shell are browned.
- Serve warm, or cold!
