Walnut-Raisin Bread
- 1 Tbsp. vinegar
- 1 c. milk
- 1 1/2 c. sifted all-purpose flour
- 3/4 tsp. salt
- 1/2 tsp. double-acting baking powder
- 1 tsp. baking soda
- 1/2 c. granulated sugar
- 1 egg, beaten
- 1/3 c. molasses
- 3/4 c. uncooked rolled oats
- 3/4 c. seedless raisins
- 1/4 c. chopped walnuts
- whipped cream cheese, softened
- Day Before:
- Add vinegar to milk; let stand.
- Start heating oven to 350u0b0.
- Grease well and lightly flour 9 x 5 x 3-inch loaf pan.
- Sift together flour, salt, baking powder, baking soda and sugar.
- Then stir in egg, molasses and milk mixture all at once. Fold in oats, raisins and walnuts.
- Turn at once into prepared pan.
- Bake 60 to 70 minutes or until cake tester inserted in center comes out clean.
- Cool on wire rack; wrap in Saran or foil and store overnight.
- Serve, sliced, with cheese.
- Makes 1 loaf.
