Cherry Orchard Salad
- Salad:
- 2 cups pitted and halved fresh cherries
- 1 cup thinly sliced radish
- 1 cup thinly julienned carrots
- 1/2 cup thinly sliced celery
- 1/4 cup thinly sliced scallions
- 2 tablespoons chopped fresh parsley
- 16 leaves lettuce leaves
- 4 teaspoons toasted sesame seeds
- Dressing:
- 3 tablespoons red wine vinegar
- 2 tablespoons lemon juice
- 1 tablespoon oil
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon lemon zest
- 1/8 teaspoon crushed red pepper flakes
- For the dressing:
- Blend all the ingredients together mixing well.
- For the salad:
- Combine cherries, radishes, carrots, celery, scallions and parsley together. Toss in dressing. Place 4 lettuce leaves on each serving plate, top with 1/4th of salad. Sprinkle with sesame seeds.
