Chicken Nuggets Ii
- Vegetable cooking spray
- 1 cup instant mashed potato flakes
- 1 1/2 tablespoons grated Parmesan cheese
- 1 1/2 teaspoons paprika
- 1 1/2 teaspoons onion powder
- 1/2 teaspoon salt
- Whites of 2 large eggs
- 1 pound boneless, skinless chicken breast halves, cut crosswise into 1-inch-wide strips
- 2 tablespoons honey (optional)
- 1 cup fat-free plain yogurt (optional)
- 1. Heat the oven to 500 degrees.
- 2. Set a wire rack on a baking sheet. Coat the rack with cooking spray.
- 3. Mix the potato flakes, cheese, paprika, onion powder, and salt on a piece of waxed paper.
- 4. In a medium bowl, beat the egg whites with a fork until slightly frothy.
- 5. Add the chicken to the egg whites and toss to coat.
- 6. Dredge the chicken strips in the potato mixture to cover.
- 7. Place the chicken strips on the prepared rack and lightly spray the top of the chicken with cooking spray.
- 8. Bake for 3 minutes, turn the strips over, spray again, and bake for another 1 to 3 minutes, until the chicken is crisp and cooked through.
- 9. Serve with honey or yogurt as dipping sauces, if desired.
