- 2-3 cups of shredded sweet potato, carrot, zucchini, or yellow summer squash
- 3 eggs
- 2 teaspoons coconut flour (or arrowroot flour)
- Season as desired
- coconut oil to cook

- No need for bread to have a bun! Grated carrot with egg binding makes a delicious substitute, and a much healthier one!
- Shred 2-3 cups of sweet potato, carrot, zucchini, or yellow summer squash (squeeze out excess water if you use zucchini or squash). My favorite is to use a mix of sweet potato and carrot.
- Beat 3 eggs with a couple of teaspoons coconut flour (arrowroot flour works too). I like to add seasoning to the egg mixture depending on what I'll be pairing it with. I love cinnamon, ginger, and turmeric in them, which make delicious patties by themselves or paired with a pork burger. But you can use any variety of herbs, spices, salt and pepper, or go plain if that's more your style. (Omit the egg to make a delicious hash!)
- Mix with the grated carrot/sweet potato.
- Fry in a griddle with coconut oil over medium to medium low heat (will vary depending on your stove) for several minutes per side until cooked through.
- Slather with some paleo mayo just like you would with your old school burger bun, slap a meat patty or two between with your favorite extras, pick up with your hands, and revel in being able to eat a burger like you used to!
