Homemade Chocolate Caramel Turtles

  1. Begin by arranging the pecans in 15 small clusters (about 4 nuts each) on a wax paper-lined baking sheet.
  2. Combine the caramels and water in a bowl. Melt the caramel in the microwave or over a double boiler. If using the microwave, microwave the caramels at a low power level for 30 seconds at a time, stirring in between. If using a double boiler, stir constantly until the caramel is smooth and completely melted.
  3. After the caramels have melted, spoon about one teaspoon of caramel over each cluster of pecans. Allow the caramel to cool and set up while you melt the chocolate.
  4. Melt the chocolate in a bowl in the microwave or over a double boiler. If using the microwave, heat at a low power level for 30 seconds at a time, stirring in between. If using a double boiler, stir occasionally until the chocolate is smooth and completely melted.
  5. Spoon the melted chocolate over each caramel pecan cluster, covering completely.
  6. Refrigerate the turtles for at least 30 minutes to allow them to set up.
