Homemade Chocolate Caramel Turtles
- 1 cup whole pecans, toasted
- 12 caramels, unwrapped (about a quarter of a package)

- Begin by arranging the pecans in 15 small clusters (about 4 nuts each) on a wax paper-lined baking sheet.
- Combine the caramels and water in a bowl. Melt the caramel in the microwave or over a double boiler. If using the microwave, microwave the caramels at a low power level for 30 seconds at a time, stirring in between. If using a double boiler, stir constantly until the caramel is smooth and completely melted.
- After the caramels have melted, spoon about one teaspoon of caramel over each cluster of pecans. Allow the caramel to cool and set up while you melt the chocolate.
- Melt the chocolate in a bowl in the microwave or over a double boiler. If using the microwave, heat at a low power level for 30 seconds at a time, stirring in between. If using a double boiler, stir occasionally until the chocolate is smooth and completely melted.
- Spoon the melted chocolate over each caramel pecan cluster, covering completely.
- Refrigerate the turtles for at least 30 minutes to allow them to set up.
