Baked Turkey Spring Rolls
- 1 teaspoon vegetable oil
- 2 large bell peppers, any color, julienne cut
- 1 medium red onion, sliced thin
- 2 tablespoons soy sauce
- 1 clove garlic, minced
- 1 teaspoon freshly grated ginger
- 1 pound boneless, skinless cooked turkey meat, cut into thin strips
- 12 egg-roll wrappers
- 1/4 cup vegetable or coconut oil to brush on rolls
- Preheat oven to 350 degrees. Heat a large pan over medium-high and add 1 tablespoon vegetable oil. Add peppers and onion, and cook for 5 minutes, stirring often. Add soy sauce, garlic, ginger and cooked turkey strips and stir well. Cook until most of the liquid has evaporated. Remove from heat and cool for 15 minutes. Do not add hot ingredients to egg-roll wrappers. This causes them to break or become soggy.
- Once cooled, place egg-roll wrapper on a clean surface with a point facing you. Add about 1/3 cup of mixture in the center of the wrapper. Fold right point over and under the filling. Fold the top and bottom pieces down, and roll from right to left, securing the left point with a touch of water. Repeat with all wrappers and filling.
- Place on a lightly oiled sheet pan spaced about an inch apart. Lightly brush egg rolls with oil. Bake for 10 minutes, turn and cook 10 more minutes.
- Makes 12 rolls and 6 servings.
