Pffeunesser( Peppernuts
- 2 eggs separated
- 1cup sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/4 teaspoon cardamom
- 1/4 teaspoon white pepper
- 1/3 c chopped citron
- Grated peel from 1 lemon
- 2cups flour
- 1. Beat together well 2egg yolks and 1cup of sugar
- 2. In a separate bowl with clean beaters beat egg whites until stiff; fold into egg yolk and sugar mixture
- 3. Stir in cinnamon, cloves,cardamom,white pepper, 1/3 cup citron.and grated lemon peel
- 4 Add 2 cups of flour
- 5 Mix well and knead slightly on a floured board. Form into little balls (size of a walnut) Place on ungreased cookie sheet
- 6.Bake in moderate oven 375F 15 minutes or until lightly brown
- 7 Cool. Store in air tight container
- Can keep for 3-5 months. That is if they last that long
