Cholesterol Free Banana Bread
- 2 1/4 c. all-purpose flour
- 1/4 c. brown sugar
- 2/3 c. wheat germ
- 1 Tbsp. baking powder
- 1/2 c. oats
- 1/2 tsp. salt
- 1/4 tsp. baking soda
- 10 Tbsp. light corn oil spread (1 1/4 sticks)
- 1 1/2 c. mashed bananas
- 1 (6 oz.) can thawed, frozen apple juice concentrate
- 1/2 c. thawed egg substitute
- 1/3 c. chopped walnuts
- 1 tsp. vanilla extract
- 1/2 stick butter or margarine, softened
- 1 (8 oz.) pkg. cream cheese
- 1 c. powdered sugar
- 3 1/2 c. milk (2 percent, whole or skim)
- 2 (3 1/2 oz.) pkg. instant vanilla or chocolate pudding
- 1 (12 oz.) container frozen whipped topping, thawed
- 2 (20 oz.) pkg. Oreo cookies
- Cream butter, cream cheese and powdered sugar.
- In another bowl, mix milk, pudding and whipped topping.
- Combine mixtures. Crush cookies with food processor until very fine, resembling fine black dirt.
- Put 1/3 of crushed cookies in bottom of foil-lined clay pot or plastic sand pail or plastic hanging flower pot. (Note:
- Needs flat bottom to sit on table.)
- Add 1/2 of pudding mixture.
- Top with 1/3 of cookies, then remaining filling.
- Top with rest of cookie crumbs before serving.
- Makes 10 to 12 servings.
- Also fun to add candy gummy worms to hide in cake.
