Poor Pesto Proscuitto
- I 11/2 lb pork tenderloin
- 4-6 thin slices of proscuitto
- 1 cup of basil pesto bought or prepared by you
- extra virgin olive oil
- salt( kosher ) pepper preferably fresh ground mix of black , green white
- Lay proscuitto on cutting board coat with pesto
- salt and pepper pork to taste
- put pork loin on top of pesto coated proscuitto cut a 1/2 inch deep pocket in top of pork loin and stuff with remaining pesto
- Wrap proscuitto around pork and secure with toothpicks
- drizzle a small amount on proscuitto wrapped pork
- preheat oven to 425 degrees roast for 30- 35 minutes or until meat thermometer reaches 150 degrees let stand 10 minutes slice and serve with pasta or couscous with a with a hand full of chopped chives , ground pepper and a touch of butter or oil and steamed carrotts or yellow squash
