Poor Pesto Proscuitto

  1. Lay proscuitto on cutting board coat with pesto
  2. salt and pepper pork to taste
  3. put pork loin on top of pesto coated proscuitto cut a 1/2 inch deep pocket in top of pork loin and stuff with remaining pesto
  4. Wrap proscuitto around pork and secure with toothpicks
  5. drizzle a small amount on proscuitto wrapped pork
  6. preheat oven to 425 degrees roast for 30- 35 minutes or until meat thermometer reaches 150 degrees let stand 10 minutes slice and serve with pasta or couscous with a with a hand full of chopped chives , ground pepper and a touch of butter or oil and steamed carrotts or yellow squash
  7. Wrap

pork tenderloin, thin, basil pesto, extra virgin olive oil, salt
