Caviar, Blinis And Creme Fraiche
- 2 large eggs, separated
- 9 tablespoons all-purpose flour
- 2 tablespoons whipping cream
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Vegetable oil
- Creme Fraiche
- Black Caviar
- Or if you do have the ingredients for the blinis, you can purchase them ready-made. I purchased mine through Caviar Express (http://www.caviarexpress.com/Caviar-Blinis) and purchased some American caviar through them as well. Perfect.
- Beat egg whites at medium speed with an electric mixer until stiff peaks form.
- Whisk egg yolks until thickened.
- Pour oil to depth of 1/2 inch in a large heavy skillet; heat to 350u0b0. Drop egg whites by teaspoonfuls into hot oil; fry, in batches, 1 to 2 minutes on each side or until golden. Drain on paper towels. Serve immediately with creme fraiche and caviar.
