Wild Mushroom Bisque
- 1/4 ounce dried wild mushrooms any type
- 1 cup boiling water
- 1/4 cup Maderia
- 3/4 cup finely chopped onion
- 4 tablespoons butter
- 1 pound mushrooms minced
- 1 teaspoon dried thyme
- 1/2 teaspoon ground rosemary
- 2 tablespoons flour
- 4 cups chicken stock
- salt and pepper to taste
- 1 cup light cream
- Soak mushrooms in boiling water and wine for 15 minutes. Drain and mince finely. Recerve them and liquid separately.
- In heavy saucepan saute onion in butter until softened. Add minced mushrooms and reserved minced wild mushrooms with thyme and rosemary. Cook until almost all moisture has evaporated stirring frequently.
- Add flour stir until it flour browns. Add stock slat and pepper. Simmer 15 minutes. Add cream
mushrooms, boiling water, maderia, onion, butter, mushrooms, thyme, ground rosemary, flour, chicken stock, salt, light cream
