Brownie Banana Bread Cupcakes
- Brownie Layer:
- 1/4 cup butter
- 3/4 cup sugar
- 1 egg
- 1 tsp vanilla
- 2/3 cup flour
- 1 1/2 heaping tbsp cocoa powder
- pinch of salt
- 1/3 cup mini chocolate chips
- Cupcake Layer:
- 1 1/3 cup flour
- 1 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- pinch of nutmeg
- 1 egg
- 3/4 cup brown sugar
- 1 tsp vanilla
- 3 bananas, mashed
- 1/4 cup sour cream
- 1/2 cup butter, metled
- Brownie Layer:
- Preheat oven to 350.
- Beat sugar and butter until fluffy. Add egg and a vanilla. Add in flour, salt, and cocoa, mixing until just combined. Spoon 1/2-3/4 tbsp into a cupcake liner.
- Cupcake Layer:
- Combine flour, salt, baking soda, cinnamon, and nutmeg. Whisk egg and brown sugar, mixing until smooth. Stir in vanilla. Add sour cream and butter and mix. Stir in dry ingredients, then add mashed bananas.
- Top brownie layer in cupcake liner.
- Bake 15-18 minutes.
