Rasberry Tomatoe Black Grouper
- 2-4 Black Grouper Fillets, (can substitute snapper or any type of grouper.
- 2-3 tablespoons Olive Oil
- 2-3 tablespoons butter
- bread crumbs for coating fish
- garlic, chopped
- capers
- juice of one lemon
- 1/4 to 1/2 Cup of Red Rasberry Honey Mustard
- One large sweet onion, cut into large chunks
- 2 large ripe, yet firm tomatoes
- Heat oil and butter in a large pan, add garlic. Lightly coat the fish in the bread crumbs. Whent he oil/butter is slightly bubblings, saute' fish till lightly crisp on each side, about 3 to 4 mins. depending on thickness of fish, till alsmost cooked through, fish will generally finish cooking once removed from the pan. Place fish on serving platter. Meanwhile, using the same pan with left over oil/butter, add capers and Red rasberry honey mustard. Stirring till mix and heated thoroughly, about 3 mins. Add chunked onions and tomatoes, and contine to cook till desired doneness. Top mixture on fish! Serves well with rice! YUM
