Carrot Cake With Cream Cheese Frosting
- Cake Batter
- 1 cup vegetable oil
- 3 eggs
- 2 cups granulated sugar
- 2 cups flour
- 1 tsp salt
- 1 tsp cinnamon
- 2 tsp baking soda
- 1 tsp vanilla
- 2 cups dessicated coconut
- 1 cup raisins
- 2 cups grated carrots
- 1 cup crushed pineapple with
- juice
- Cream Cheese Frosting
- 4 oz cream cheese (softened)
- 4 oz butter or margarine (softened)
- 1/2 pound Icing Sugar
- 1 tsp vanilla
- Cream together the first 8 ingredients, mix until light & fluffy. Stir in the coconut, raisins, grated carrots, & pineapple. Pour into greased or lined pans. Bake in 350 degree oven for 50 minutes or until a toothpick comes out clean. Remove from pans(s) when sligtly cool, allow to completely cool before topping with Cream Cheese Frosting:
- Cream all frosting ingredients together & beat until Light & Fluffy. Spread on Cake. Decorate as desired.
