Chocolate Chip Banana Bread
- 2 Ripe Bananas
- 2 Eggs
- 1 Cup Packed Light Brown Sugar
- 3/4 Cup Vegetable Oil
- 1/2 Cup Sour Cream
- 3/4 Teaspoon Ground Cinnamon
- 1 Teaspoon Baking Soda
- 1 Teaspoon Baking Powder
- 1 Teaspoon Vanilla Extract
- Pinch of Salt
- 1 Cup Any Chocolate Chips
- 1 3/4 Cups All-Purpose Flour
- 1. Put oven rack in the middle position and pre-heat oven to 350F.
- 2. Grease a Loaf Pan.
- 3. Peel bananas, place in a small mixing bowl, and mash.
- 4. In a Large Mixing Bowl, combine the eggs, sugar, oil, and sour cream, and whisk until smooth.
- 5. Add the cinnamon, baking soda, baking powder, vanilla extract, salt, chocolate chips, and bananas to the egg mixture and whisk to combine.
- 6. Ad the flour and stir until combined. Do not overmix!!!!
- 7. Pour the batter into the loaf pan and bake until golden brown, about 1 hour and 10 minutes.
- 8. Using oven mitts, remove the loaf from the oven and let rest for 10 minutes in the pan. Turn out onto a wire cooling rack to finish cooling before serving.
