Lime Rice And Beans
- 1 cup uncooked white rice
- 2 cups water or vegetable broth
- juice from one lime
- 2 tablespoons olive oil
- 6 large garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- grated peel from one lime
- 1 fresh tomato diced
- 1 can pinto or black beans, drained
- 1/2 cup shredded cheddar cheese
- Heat oil in large saucepan over medium heat. Add garlic and sautee for one minute. Add rice and stir for two more minutes. Add water/broth and salt and bring to a boil. Reduce heat to low and cover. Cook about 15 minutes then add beans. Simmer about five more minutes til rice is tender and beans are hot, then let stand covered for five minutes after they are cooked.
- Add cilantro, parsley, tomato, and lime peel and juice, and stir. Place in a large dish and top with cheese.
