Orange Chile Chicken Salad

  1. Prepare chicken. Combine 1/2 cup orange juice,4 cloves garlic & 1 1/2 tsp chile powder in large nonstick skillet. Bring to boil ovr high heat. Boil about 2 minutes or until mixture just coats bottom of pan. Reduce heat to medium. Add chicken,cook and stir until chicken is white and no longer pink,about 3 minutes. Remove from heat,allow to cool.
  2. Make dressing: Combine 1/4 cup orange juice,1 TB cider vinegar,1 tsp grated orange peel,1 tsp oil,1/2 tsp honey & 1/4 tsp crushed red pepper. set aside. Make salad. Combine lettuce,jicama, orange segmants & bell pepper, drizzle with dressing and toss. Top with cooled chicken & cheese.
