Caesar Salad
- 1 egg
- 8 cups torn romaine lettuce leaves
- 3 tablespoons lemon juice
- 3 cloves garlic,minced
- 1 teaspoon Dijon mustard
- 1/3 cup olive oil
- 1/3 cup Parmesan cheese, freshly grated
- 1 cup croutons
- 6 pieces anchovy fillets, drained & mashed
- Place egg on a spoon and lower it into a small pan of boiling water.Immediately remove pan from heat;let egg stand in water 1 min. Remove egg and place in cold water.Place lettuce in a large bowl.In a med bowl,mix lemon juice,garlic and mustard,using a whisk or fork,gradually beat in oil.Mix in anchovies.grind pepper over lettuce add dressing to greens and mix gently.Break in prepared egg and mix well.Sprinkle with cheese and croutons and mix again.Serve at once.
