Tuna Gumbo

  1. Melt margarine in large pot and add onion, fresh pepper and garlic.
  2. Saute for about 5 minutes.
  3. Combine flour and chicken broth; mix thoroughly.
  4. Add to onion mixture, stirring constantly. Add tomatoes and seasonings; bring to a boil.
  5. Cover and simmer for 30 minutes.
