Tuna Gumbo
- 2 Tbsp. margarine
- 1 medium green pepper, chopped
- 1 Tbsp. flour
- 1 (No. 1) can whole tomatoes and liquid, crushed
- 1/2 c. parsley
- 1/2 tsp. salt
- 1 (13 oz.) can tuna, drained
- 1 1/2 tsp. Worcestershire sauce
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1 can chicken broth
- 1 bay leaf
- 1/4 tsp. thyme
- 1 tsp. lemon juice
- 3 c. white rice, cooked
- Melt margarine in large pot and add onion, fresh pepper and garlic.
- Saute for about 5 minutes.
- Combine flour and chicken broth; mix thoroughly.
- Add to onion mixture, stirring constantly. Add tomatoes and seasonings; bring to a boil.
- Cover and simmer for 30 minutes.
