Green Peppercorn Brandy Sauce
- 1/2 cup butter
- 1 sweet onion chopped finely
- 2 cups Brandy
- 4 cups broth, I use beef
- 1 small can green peppercorns, drained and washed
- 1 cup whipping cream
- 1 tbsp brown sugar
- 1 tbsp dijon mustard
- 4 tbsp blue cheese
- Saute the onions in butter until brown
- Add the brandy and reduce, may add a dash s&p
- Add the peppercorns and the beef broth
- Reduce
- About 1/2 hour before you serve ( on steaks or chicken)
- Add 1 Cup whipping cream , mustard and brown sugar
- Reduce, just before serving , add the blue cheese to melt in
- Enjoy, totally delicious and seriously a show stopper.
- I serve with mashed potatoes, steak, grilled vegies and hot bread or cornmeal muffins
