Green Peppercorn Brandy Sauce

  1. Saute the onions in butter until brown
  2. Add the brandy and reduce, may add a dash s&p
  3. Add the peppercorns and the beef broth
  4. Reduce
  5. About 1/2 hour before you serve ( on steaks or chicken)
  6. Add 1 Cup whipping cream , mustard and brown sugar
  7. Reduce, just before serving , add the blue cheese to melt in
  8. Enjoy, totally delicious and seriously a show stopper.
  9. I serve with mashed potatoes, steak, grilled vegies and hot bread or cornmeal muffins
