Coconut Spareribs
- one two inch piece of fresh ginger, peeled and coursely chopped
- 5 garlic cloves peeled
- 2 stalks fresh lemongrass, bottom part only, thinly sliced
- 1/4 cup cilantro stems
- 1 tsp graham masala
- 1 cup honey
- 1/2 cup canned coconut milk
- 1/4 cup sweet soy sauce
- 1/4 cup soy sauce
- 2 pounds pork spareribs
- Combine marinade/sauce ingredients in a food processor, blend until smooth.
- Place the ribs in a glass dish, cover with sauce and rub in with your hands. Refrigerate overnight.
- When you are ready to cook, preheat the oven to 375. Place the ribs on a baking sheet lined with foil, save marinade for basting. Bake for 30 minutes, basting every 10 minutes.
- Increase the temperature to 400 degrees, and continue to cook an additional 20 minutes. Baste for the first 10 minutes only. Finish the ribs for 3 minutes under the broiler, or on the BBQ.
- Slice and enjoy!
