Ziti With Spinach & Shrimp
- one onion, chopped
- three lg clove of garlic, minced
- 3 TBSP Olive oil
- splash rice vinegar
- 1 lemon
- crushed red pepper flakes
- italian seasoning spice mix
- 1 lb box of ziti or other pasta
- 1 lb of frozen or pre cooked shrimp
- 1 box frozen chopped spinach (partially defrosted)
- 1/2 cup grated parmesan cheese
- 1. prepare pasta according to directions on box, al dente please
- 2. defrost frozen shrimp in cold water. Add to boiling pasta for the last minute of cooking to warm up shrimp.
- 3. sautee chopped onion till translucent, add garlic, red pepper, seasonings.
- 4. add box of frozen chopped spinach, cover & cook till spinach is completely cooked & toss the whole thing together to blend ingredients. Add a splash of rice vinegar to zip up the flavor.
- 5. Place one serving of freshly cooked ziti and shrimp to bowls. Put a few large tablespoonfulls over the pasta and toss gently
- 6. Squeeze a lemon over the pasta, to taste.
- 7. Sprinkle freshly grated parmesan cheese to taste.
- 8. Serve immediately, bon appetito.
