Turkey Cacciatore
- 1 1/4 lb. boneless turkey breast
- vegetable cooking spray
- 2 cloves of garlic
- 1 onion, sliced
- 1 green pepper, sliced
- 3/4 lb. sliced mushrooms
- 1 can whole tomatoes
- 1 can tomato paste
- 1 Tbsp. dried oregano leaves
- 1/4 c. chopped parsley
- salt and pepper
- Parmesan cheese
- 1 pkg. spaghetti
- Cut turkey into small pieces.
- Spray skillet with cooking spray, add turkey pieces and brown; set aside.
- Add garlic, onion, green pepper and mushrooms to the pan.
- Saute over high heat until vegetables are tender.
- Add tomatoes, tomato paste and oregano; simmer for 10 minutes.
- Cook spaghetti according to directions. Taste turkey mixture.
- Add salt and pepper, if desired.
- Sprinkle top with parsley.
- Serve over portions of spaghetti.
- Pass Parmesan cheese at the table.
