Apricot Bars
- First Layer:
- 1 C. butter, softened
- 1/2 C. sugar
- 2 C. four
- Second Layer:
- 8 oz. apricots
- 2/3 C. flour
- 1 tsp. baking powder
- 4 eggs
- 1/2 tsp. salt
- 2 C. brown sugar
- 1 tsp. vanilla
- 1 C. nuts, pecans or walnuts
- First Layer:
- Mix first three ingredients. Grease a jelly roll pan. Press into pan and bake about 25 min.
- Second layer:
- Cut up 8 oz. apricots.
- Place in saucepan in water.
- Cook for 10 min. Drain and cool.
- Mix flour with baking powder and salt. Add 4 eggs, brown sugar, vanilla and chopped nuts. Add apricots and spread over first mixture.
- Bake 35-40 min. in 350 degree oven.
- Cool and spread with butter frosting or powdered sugar.
