Seitan Stew / Sloppy Joe'S
- For 1 lb. of seitan
- (Buy Bridge Seitan if you can; it is far superior to any other I have had.)
- 4 potatoes
- One small onion
- 2 cloves garlic
- 1 small can of diced tomatoes
- Cut up seitan into small chunks and reserve the juice in the container. Peel and cube potatoes. Steam potatoes separately until just tender (don't let them get too soft). Slice onion and mince garlic. In 1-2T of olive oil saute onion and garlic for a few minutes and the onion softens. Add chopped seitan and saute a few more minutes. Add can of tomatoes and juice from seitan container and let simmer slowly for 10-15 minutes. In the meantime, steam potatoes, or if they are already steamed, add them after the 15 minutes and let the potatoes cook for another 10 minutes or so with the mixture on a low simmer. Season with tamari and basil and/or oregano--just a little of each.
- Also, Sloppy Joe is good with seitan--same idea, but no potatoes; good over brown rice. After saute of onion, garlic and seitan, you can add chopped dill pickle and ketchup to taste.
