Giant Chocolate Chunk Cookies Savior Fare
- 3 sticks unsalted butter softened
- 1 1/4 cups firmly packed light brown sugar
- 1 1/4 cups granulated sugar
- 2 teaspoons vanilla
- 3 large eggs
- 3 1/2 cups all purpose flour
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 12 ounces fine quality semisweet or white chocolate chopped coarse (about 2 cups)
- 2 cups coarsely chopped pecans or salted roasted macadamia nuts
- In a large bowl with an electric mixer cream the butter, add the brown sugar and granulated sugar, beating and beat the mixture until it is ligh and fluffy. Add the vanilla, beat the mixture until it is combined well, and the eggs, 1 at a time, beating well after each addition. Into a bowl sift together the flour, the baking soda and the salt, add the mixture to the butter mixture and beat the mixture un it is combined well. Stir in the chocolate and the pecans and drop level 1/4 cupfuls of the batter 3 inches apart on lightly greased cookie sheet. Flatten the cookies into 1/2 inch thick rounds with wet hands and bake them in the middle of a preheated 350 degree oven for 12 to 15 minutes or until they are golden. Transfer the cookies to racks and let them cool
